Elk/Bison Chili

Ingrédients

  • 1 red onion (chopped)

  • 1 red bell pepper (chopped)

  • 1 cup corn

  • 4 garlic cloves

  • 28oz canned diced tomatoes

  • 2 tablespoons chili powder

  • 2 teaspoons cumin

  • 1 1/2 teaspoons paprika

  • 1 can black beans

  • 1 can red kidney beans

  • 1 can light red kidney beans

  • 2 cups veggie broth

  • Ground Elk

  • Mexican cheese

  • Sour cream

  • Avacado

Instructions

  1. Cook ground Elk

  2. Cook onion, bell pepper, salt, pepper, and olive oil in chili bowl on medium temp

  3. Add garlic after a few minutes

  4. Add spices (chili powder, cumin, and paprika)

  5. Add beans (without juice), diced tomatoes (with juice), broth, and corn

  6. Cook at a simmer/low boil for 45 minutes

  7. Top with Mexican cheese, sour cream, and avacado
