Elk/Bison Chili

1 red onion (chopped)
1 red bell pepper (chopped)
1 cup corn
4 garlic cloves
28oz canned diced tomatoes
2 tablespoons chili powder
2 teaspoons cumin
1 1/2 teaspoons paprika
1 can black beans
1 can red kidney beans
1 can light red kidney beans
2 cups veggie broth
Ground Elk
Mexican cheese
Sour cream
Avacado
Instructions
Cook ground Elk
Cook onion, bell pepper, salt, pepper, and olive oil in chili bowl on medium temp
Add garlic after a few minutes
Add spices (chili powder, cumin, and paprika)
Add beans (without juice), diced tomatoes (with juice), broth, and corn
Cook at a simmer/low boil for 45 minutes
Top with Mexican cheese, sour cream, and avacado
