Holiday Cheese Tarts

18-20 vanilla wafers
2 (8-ounce) packages cream cheese
3/4 cup sugar
1 teaspoon lemon
1/2 teaspoon grated lemon rind
2 eggs
Instructions
1. Preheat oven to 375°F.
2. Cream together cream cheese, sugar, lemon, lemon rind, and eggs until well blended.
3. Place one vanilla wafer in each muffin tin.
4. Fill each cup halfway with filling.
5. Bake for 20 minutes.
6. Let cool and top with cherry pie filling and whipped cream if desired.
