Beef Stroganoff

2 lb. lean beef (have butcher slice thin across the grain, then cut it in strips at home)
2 Tbsp butter
1 Tbsp minced onion
1/2 lb mushrooms, sliced
1/2 tsp salt
1/4 tsp nutmeg
1/2 pint sour cream
Instructions
In a heavy pan, sauté butter and onion till glistening and yellow. Add beef strips, cooking quickly until browned, cooking only a few minutes.
Add mushrooms, salt, and nutmeg to the pan and cook. Lastly, stir in sour cream and serve over cooked rice.
