Miso Soup

12 medium white potatoes
2 packs or 28 oz soft tofu
Handful wakame seaweed
3 tbsp miso paste
1/2 cup spinach
Instructions
Wash and peel potatoes
Chop potatoes into small cubes
Put potatoes in a large pot and fill with 12 cups of water
Bring the water to a boil
Soak seaweed in water and wash off the salt
Cut tofu into small cubes
Rinse spinach
When the potatoes have softened, add tofu and seaweed
Add miso paste and stir
Cook for a few more minutes and add spinach before serving
Serve with Want Want or Bin Bin crackers
