Veggie Soup

White/ yellow Onion - diced
1 rib celery - chopped
1 carrot - chopped
2 garlic cloves
2 cups veg broth
1 15 oz can great northern beans - drained and rinsed
1 14.5 oz can fire roasted tomatoes
Optional:
Basil, Italian seasoning, s&p, Parmesan
Instructions
1. Cook carrot, onion, and celery in olive oil for 3 minutes
2. Add garlic
3. Stir in rest, bring to boil
4. Cover and simmer at reduced heat 25-30 minutes
5. Sprinkle with shredded Parmesan cheese
