1 green bell pepper
1 red bell pepper
4 boneless skinless chicken breasts
2 tsp vegetable oil
1 garlic clove, minced
1 envelope Lipton Onion Soup mix
1/2 cup water
1/2 cup salsa
12 flour tortillas, warmed
Optional toppings:
Cheese
Guacamole
Salsa
Sour cream
Instructions
1. Cut peppers into 1/2-inch strips and chicken crosswise into thin strips.
2. Heat skillet over medium-high heat. Add 1 tsp oil and cook chicken, stirring for 3-4 minutes until no longer pink. Remove and set aside.
3. Add remaining oil, peppers, garlic, and stir fry for 1-2 minutes until crisp-tender.
4. Add chicken, soup mix, water, and salsa; cook and stir 2-3 minutes or until heated through.
5. Serve chicken mixture on tortillas with toppings if desired.
