Easy Chicken Curry

4 chicken breasts
4 tbsp butter
1 tbsp curry powder
1 apple, peeled, cored, and chopped
1 cup golden raisins
1 cup chicken broth
1 medium onion, chopped
Cooked white rice
Chopped peanuts, shredded coconut, and/or chopped cilantro
Instructions
Cut chicken breasts into 3-4 large pieces each. Brown in butter in a large skillet, about 5 minutes per side. Transfer to plate. Add remaining butter to skillet, reduce heat to medium, and cook onion, 5 minutes or until soft. Return chicken to skillet; add apple, raisins, and broth. Bring to boil; cover, reduce heat to low, and cook 10-12 minutes or until chicken is done. Serve over rice. Sprinkle with your choice of chopped peanuts, coconut, and cilantro. Also good with chutney on the side.
