Italian Choppped Salad

Ingrédients

Marinated chickpeas:

-1 can chickpeas

-3 tbsp olive oil

-1 tbsp red wine vinegar

-1/2 tsp oregano

-Pinch of salt and pepper

Dressing:

-1/4 cup olive oil

-2 tbsp red wine vinegar

-1 tsp dijon

-salt and pepper to taste

Salad:

-1 head romaine lettuce, chopped

-Marinated chickpeas

-1/2 cucumber, chopped

-1/3 cup artichoke hearts, chopped

-1/3 cup sun-dried tomatoes, chopped

-handful fresh basil leaves

-1/2 cup calabrese salami

-1/3 cup grated parmesan cheese

Instructions

-Marinade the chickpeas for at least 30 minutes. But if you have time you can marinade them overnight for extra flavour. Mix the dressing and add all the salad ingredients together. Pour as much dressing as you like on the salad, reserving any leftover dressing for later. Add an extra sprinkle of parmesan cheese on top for extra goodness.
