Cranberry Sausage Stuffing

8 cups whole wheat bread cubes
1 lb Italian sausage
1/2 cup butter
1 cup chopped celery
1 cup chopped onion
2 tbsp chopped parsley
1 cup dried cranberries
1/2 cup chopped walnuts
1 1/2 cups chicken broth
Salt and pepper to taste
Instructions
Toast bread cubes at 350°F for 5-7 minutes. Brown sausage in a skillet, then add butter, celery, and onion, cooking until softened. Mix in parsley, cranberries, and walnuts. Add chicken broth and season with salt and pepper. Bake covered at 350°F for 30 minutes, then uncover and bake an additional 10 minutes.
