Broccoli and Rice

1 1/4 cups long grain rice
4 cups chicken broth
2 10-oz pkgs of frozen broccoli
3/4 cup chopped onions
1/2 to 3/4 cup margarine
1 8-oz pkg of cream cheese
1 can of cream of chicken soup
3/4 cup evaporated milk
Crushed potato chips
Grated cheddar cheese
Instructions
Cook rice in 3 1/2 cups of chicken broth, and set aside after fluffing rice a bit. Cook broccoli until barely done and set aside. Sauté onions in margarine and set aside. Mix soup and 1/2 cup of the broth. Heat until warm, and stir in cream cheese until melted, then add in other ingredients and place into buttered 3 qt. baking dish. Put cheese and potato chips on top and bake at 350°F for 30-35 minutes. This recipe can be prepared ahead then baked before serving.
