Old-Fashioned Pork Chops and Cabbage

Ingrédients

For dry rub for pork

3/4 tsp Kosher salt

3/4 tsp paprika

1/2 tsp black pepper

6 pork country-style ribs or thick slices of boneless pork shoulder

3/4 to a full head of cabbage, medium

1/2 cup rice

1 medium yellow onion, chopped

2 cloves garlic, minced

150 ml chicken stock or water

300 g canned tomatoes or 3 fresh, peeled, grated tomatoes

2 tbsp tomato paste

1.5 tsp paprika

2 tsp apple vinegar

Half a bay leave (or one small one)

Kosher salt – 1.5 tsp for rubbing the cabbage, maybe a little more for seasoning

Instructions

Slice the cabbage into ½ inch slices and rub into it 1.5 tsp salt.

Mix the dry rub and spread it over the pork chops. Set aside.

Heat up 1 tbsp olive oil in a deep pan or Dutch oven with a lid. Saute the onion for 4-5 min on medium/med-low heat. Add the garlic and saute for another minute. Then add the sliced cabbage and saute for 5-6 min, stirring occasionally. Add 150 ml hot water or chicken stock to it, stir. Cover and simmer over low heat for 10 min.

Stir in 1.5 tsp paprika and 1/2 tsp black pepper. Stir in 2 tbsp tomato paste (could thin it out with a little water if you want). Add the tomatoes. Add 2 tsp apple vinegar.

In an earthen vessel/ceramic pot with a lid, add a layer of 1/3 of the cabbage, then half the rice, then half the pork chops. Add another 2/3 of cabbage, half a bay leaf, half the rice again, and the remaining pork on top of that. Finish with the last 1/3 of the cabbage on top. Add a couple of tablespoons of hot water or chicken stock if it looks like it needs a little liquid (mine didn’t, there was plenty of liquid). Drizzle a little olive oil on top. Cover with the lid.

Transfer to cold oven and set it to 425’F/220’C. Once it’s reached this temperature, cook for 30 min. Lower the heat to 320’F/160’F and cook for another 75 min.

Notes

If using a whole head of cabbage, increase chicken stock.
