Chicken Parmigiana Sauce

1 T olive oil
1 onion, finely diced
2 garlic cloves, finely chopped
1 T tomato paste
400g canned chopped tomatoes
¾ c chicken stock (see directions)
1 t caster sugar
1 T Basil
For parmigiana
Chicken schnitzels
Oil
Shredded mozzerellla cheese (or mozzarella cheese ball cut into slices)
Instructions
Make chicken stock with 1/2 t Massel chicken stock powder.
Fry oo onion and garlic.
Add remainder.
Simmer 45 mins.
Purée
Divide into 2 - freeze one half
Notes
For Parmigiana
In frypan with lid, fry chicken snitzels both sides until chicken is cooked.
Top with warmed parmigiana sauce and top with shredded mozzarella cheese.
Plus lid on frypan.
Remove lid when cheese has melted. (Cheese will only brown if you can put it on a tray and under a grill)
