Ingrédients

1 can marinated artichoke hearts

1 onion, chopped

1 garlic clove, minced

½ cup chopped each red and green pepper

¼ cup chopped mushrooms

½ package frozen chopped spinach, thawed and drained

1 can artichoke hearts, drained and chopped

1 cup grated zucchini

2 cup red potatoes, diced

1 cup parmesan cheese

1 cup cheddar cheese (or any other cheese you like)

¼ cup bread crumbs

6 eggs

1 each salt and pepper

3-4 shakes Tabasco

1 T Italian seasoning

Instructions

Drain oil from marinated artichoke hearts into fry pan. Cook onions and garlic in oil. Place next 9 ingredients into a bowl. Add cooked onions and oil from pan. Mix together. In another bowl, whisk eggs together. Add seasonings and whisk until incorporated. Add to bowl of ingredients. Place in 9x13 pan. Bake at 350°F for 45-60 min or until top is cooked and brown. Serve with salsa, sour cream, and avocado.
