Cold Butter Blend - 10 lbs
Sugar - 20 cups (5 qts)
Brown Sugar - 20 cups (5 qts)
Baking Soda - 1/2 cup
Baking Powder - 1/2 cup
Salt - 3 tbsp
Vanilla - 1/2 cup
Liquid Eggs - 8 1/3 cups (50 eggs)
High Gluten Flour - 15 qts
Oatmeal - 7 qts
Chocolate Chips - 20 cups
Instructions
Mix butter blend, sugars, baking soda, baking powder, and salt on speed 1 for 1 minute, then increase to speed 4 for 4 minutes. Scrape bowl and paddle. Add vanilla and liquid eggs slowly on speed 2, mix for 2 minutes. Add flour and oatmeal, mix on speed 1 for 1 minute then on speed 3 for 3 minutes. Add chocolate chips and mix on speed 1 for 1 minute.
Notes
Add butter blend, sugars, baking soda, baking powder, and salt to the bowl and mix on speed 1 for 1 minute, then increase to speed 4 for 4 minutes. Scrape bowl and paddle halfway through.
