4 small chicken breasts
salt, divided
fresh cracked pepper, divided
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon sweet paprika
1/2 tablespoon + 1/3 tablespoon dried thyme, divided
1/2 teaspoon cayenne pepper
1/2 large yellow onion, finely diced
1 tablespoon butter
2 tablespoons tomato paste
3/4 cup heavy cream
3/4 cup bone broth
1/2 cup sun-dried tomatoes
a handful of fresh basil
8 oz. low-carb Kaizen ziti pasta
pecorino cheese, freshly shredded
Instructions
Lay out the chicken on parchment paper or add them to a bowl. Season with a couple pinches salt and fresh cracked pepper, along with the onion powder, garlic powder, paprika, 1/2 tablespoon thyme, and cayenne. Mix it well, ensuring all sides of the chicken are covered thoroughly.
Heat oil in a pan over medium heat. Place the chicken in the pan and cook for about 3 minutes on each side. We’re not going to cook it fully — that step will come in later. Once the chicken is seared and golden brown on both sides, transfer to a plate and set aside.
Finely dice the yellow onion and add it to the same pan with the butter. Mix well. Then season with salt, pepper, and 1 teaspoon of thyme. When the onions turn translucent, add the tomato paste, cream, and bone broth, mixing well with a spatula.
Add the sun-dried tomatoes, fresh basil, and transfer the chicken back to the pan. Spoon the sauce over the chicken, and put the lid on for about 4-5 minutes, or until the chicken is cooked through.
While the chicken continues cooking, prepare your pasta of choice according to the package instructions. I use my Kaizen Pasta to keep this low carb, and you can choose any of my high-protein and low-carb Kaizen pastas for this recipe!
Turn off the heat. Remove the chicken from the pan and reserve some of the sauce for later to mix in with your pasta.
Plate up the pasta, top it with sliced chicken, fresh basil, and some freshly shredded pecorino. Add some more sauce (optional) & devour. Enjoy!
