Ingrédients

8-12 oz cheddar

8oz jack

4 oz meunster

Elbows or cavatappi

Butter

5c milk, bay leaf, half an onion

1/3c flour

Nutmeg, mustard, cayenne, paprika

Instructions

Boil pasta 2min shy of done, drain, rinse and set aside

Shredded cheddar and jack, cube meunster

Put milk, bay leaf and onion in sauce pan on low

6T butter in Dutch oven, add flour and cook for 2 min

Strain milk and whisk into the roux, season with salt and spices

Add 2/3 of shredded cheese, mix until smooth, add pasta

Place 1/2 in baking dish, layer 1/2 of remaining cheese, smoosh cubes of meunster in, put remaining pasta on top, layer with remaining cheese, add bread crumbs of desired

Bake uncovered for 30 min at 350, cool for 10 min
