Lettuce Wraps

2 tbsp olive oil
2 tbsp grated ginger
2 tbsp rice vinegar
1/2 tsp crushed red pepper
1 1/2 cups grated carrots
1 cup snow peas, cut lengthwise
1/4 cup sliced almonds
2 chicken breasts, cut into strips
2 tbsp teriyaki sauce
1 tbsp honey
1/2 tsp cornstarch
1 cup bean sprouts
1/2 cup green onions
12 bib lettuce leaves
Instructions
Heat skillet, add chicken and garlic, and sauté for 5 minutes until done. In a bowl, mix teriyaki sauce, vinegar, honey, pepper, and cornstarch, then add to chicken. Stir in vegetables and cook for 3 minutes until sauce thickens. Stir in almonds and spoon mixture into lettuce leaves. Roll up and serve.
