Homemade Humus with Crispy Lamb and Tortillas

Ingrédients

  • Use tortillas recipe (make 2 for each person)

  • 6 red onions- caramelised

Hummus

  • 1 x 700g jar of chickpeas (or 2 tins)

  • Half of the aquafaba/ chickpea water (more or less, depending on how soft the chickpeas are)

  • 3 tbsp runny tahini

  • Juice of ½ - 1 lemon

  • ½ tsp flaky sea salt

  • 1 tbsp olive oil

  • 1/2 - 1 garlic clove

  • Pinch of cumin

Crispy lamb:

  • 400g lamb mince (or vegan alternative)

  • 1 shallot, minced

  • 2 garlic cloves, minced

  • 1 stalk spring onions, sliced thinly

  • 1 tsp minced ginger

  • 1 day tbsp chopped coriander

  • 1 birds eye chillies

  • pinch of salt

  • 1 tsp pepper

  • 1 heaped tbsp cumin

  • 1 tsp ground coriander

  • 1 tsp msg

  • 1 tsp chilli powder

  • 1 tbsp soy sauce

  • 1 tbsp sugar

Instructions

  1. Air fry veg (carrots, mushrooms, onions, courgette)

Hummus:

  1. combine all ingredients into a blender

  2. season with more salt or lemon to taste

Cripsy Lamb:

  1. Combine all ingredients together to marinade lamb

  2. Fry lamb mince until crispy & brown
