Homemade Humus with Crispy Lamb and Tortillas

Use tortillas recipe (make 2 for each person)
6 red onions- caramelised
Hummus
1 x 700g jar of chickpeas (or 2 tins)
Half of the aquafaba/ chickpea water (more or less, depending on how soft the chickpeas are)
3 tbsp runny tahini
Juice of ½ - 1 lemon
½ tsp flaky sea salt
1 tbsp olive oil
1/2 - 1 garlic clove
Pinch of cumin
Crispy lamb:
400g lamb mince (or vegan alternative)
1 shallot, minced
2 garlic cloves, minced
1 stalk spring onions, sliced thinly
1 tsp minced ginger
1 day tbsp chopped coriander
1 birds eye chillies
pinch of salt
1 tsp pepper
1 heaped tbsp cumin
1 tsp ground coriander
1 tsp msg
1 tsp chilli powder
1 tbsp soy sauce
1 tbsp sugar
Instructions
Air fry veg (carrots, mushrooms, onions, courgette)
Hummus:
combine all ingredients into a blender
season with more salt or lemon to taste
Cripsy Lamb:
Combine all ingredients together to marinade lamb
Fry lamb mince until crispy & brown
