Creamy Tomato & Sausage Pasta

Ingrédients

12 oz small penne pasta

8 oz Italian Sausage

1 large clove garlic, minced

1 Tbs. olive oil

5 oz baby spinach

1 1/2 cups jarred marinara sauce

1/4 cup heavy cream

Parmesan cheese

Instructions

1. Cook 12 oz pasta according to package directions . Drain, RESERVING 1/4 cup cooking liquid.

2. Meanwhile, in a very large skillet. Cook sausage and garlic in olive oil over medium high heat until browned, using a wooden spoon to break up the meat as it cooks. Spoon off and discard the fat in the skillet.

3. Add the baby spinach and toss until wilted. Sir in marinara sauce and cream. Bring to a simmer.

4. Stir in the pasta and reserved cooking water. Toss to combine .

5. Sprinkle with grated Parmesan cheese.
