Ingrédients

2 cloves garlic

2 large egg yolks

1 (2 ounce) can anchovy fillets (packed in olive oil) or 1-2 tablespoons fish sauce

2 teaspoons Worcestershire sauce

3 tablespoons fresh lemon juice

1/2 teaspoon Dijon mustard

1/4 teaspoon black pepper

1/4 cup grated Parmigiano-Reggiano cheese

1/2 cup plus 2 tablespoons light-tasting olive oil

Instructions

Place all the ingredients except the oil in a pint-sized Mason jar and purée with a stick blender until smooth. With the blender running inside the jar, drizzle in the oil until it’s thick and creamy.
