Fish Tacos

Ingrédients

Corn tortillas

2 cod fillets

1 tbsp blackening seasoning

1 avocado

2 cups cabbage or lettuce

3 roma tomatoes

½ red onion

½ orange pepper

1 jalapeño

1 tsp lime juice

Feta cheese

Instructions

DIRECTIONS

1. Pat cod fillets dry and rub with blackening seasoning.

2. Heat a large skillet with oil. When oil is hot, cook the cod for 5-6 minutes on each side.

3. Meanwhile, fry the corn tortillas in a small pan.

4. Finely chop tomatoes, red onion, green pepper, and jalapeno. Combine and season with lime juice and salt.

5. Dice avocado and chop cabbage.

6. Top tortillas with cod, pico de gallo, avocado, cabbage, feta cheese, chipotle mayo, and cilantro.
