Lemon Almond Crumb Bars

For the crust:
1 cup all-purpose flour
1/4 teaspoon kosher salt
1/2 teaspoon ground ginger
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the filling:
1 cup granulated sugar
2 tablespoons all-purpose flour
1/8 teaspoon kosher salt
2 teaspoons lemon zest
1/2 cup lemon juice (about 2 large lemons)
For the topping:
1/2 cup old-fashioned oats
1/4 cup all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon ground ginger
1/4 teaspoon kosher salt
1/4 cup unsalted butter, melted
Instructions
1. Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper.
2. For the crust: Combine flour, salt, ginger, sugar, and melted butter. Press into bottom of pan.
3. Bake crust until lightly browned, 10-15 minutes.
4. For the filling: In a bowl, whisk together sugar, flour, salt, lemon zest, and lemon juice.
5. Pour filling over crust and bake 20-25 minutes until filling is set.
6. For the topping: Combine oats, flour, sugar, ginger, salt, and melted butter.
7. Sprinkle topping over filling and bake 10-15 minutes until topping is golden.
8. Cool in pan before slicing into bars.
