Simple Bean and Cheese Quesadillas

Ingrédients

⅓ cup refried beans

1 flour tortilla

¼ cup shredded monterey jack cheese

cooking spray

salt

2 tbsp salsa

Instructions

To assemble quesadillas, spread beans over half of a tortilla and top with monterey jack. Fold in half and coat with cooking spray.

Heat a skillet over medium heat. When hot, add quesadillas and season both sides with salt to taste. Cook until browned and cheese is melted, about 1-2 minutes per side.

To serve, cut into wedges and top with salsa.
