Pizza Pie Cafe Sugar Cookie Dough

Cold Butter Blend - 8 lbs
Sugar - 28 cups (7 qts)
Brown Sugar - 4 cups
Baking Soda - 1/3 cup
Baking Powder - 1/3 cup
Salt - 2 tbsp
Liquid Eggs - 5 1/2 cups (33 eggs)
Lemon Juice - 1 1/4 cups
High Gluten Flour - 56 cups (14 qts)
Instructions
Add butter, sugars, baking soda, baking powder, and salt to the bowl and mix on speed 1 for 1 minute, then increase to speed 4 for 4 minutes. Scrape bowl and paddle. Slowly add liquid eggs on speed 2, mix for 2 minutes. Add lemon juice and mix for 30 seconds on speed 2. Add flour and mix on speed 1 for 1 minute, then speed 3 for 3 minutes.
Notes
Add ingredients in order and mix on speed 1 for 1 minute, then increase to speed 4 for 4 minutes. Scrape bowl and paddle.
