Double Chocolate Cookies

1/2 cup butter
1/2 cup brown sugar
1 teaspoon vanilla extract
1 egg
1 1/3 cup all-purpose flour
1/3 cup unsweetened baking cocoa
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup mini dark chocolate chips
Instructions
Preheat oven to 350 (330 w/convection) degrees F. Line two cookie sheets with parchment paper.
Microwave butter in safe bowl until mostly melted, about 40 seconds. Whisk the butter until fully melted.
Add the sugar and beat on high speed until fully dissolved. Stir in vanilla and egg and beat again until light in color.
Add flour, cocoa powder, baking soda, and salt. Mix dough until just combined. Dough should be soft and a little sticky, but not overly sticky. Stir in chocolate chips.
With medium scoop, scoop out 1.5 Tbsp of dough and place 2 inches apart on sheet.
Bake 7 - 10 minutes until cookies are set. They be puffy and will look a little undercooked in the center.
