Ingrédients

5 large Tortillas

Steak, chicken, (or any meat)

1 diced Tomato (or sub cherry tomatoes)

8 oz Shredded Colby

8 oz shredded pepper Jack

1 Onion

2 Green Bell pepper

Instructions

  1. Steak: Cook the steak strips in a cast iron skillet with chili lime, garlic powder, onion salt, coriander, chipotle chile Powder, salt pepper, and corn starch

  2. Chicken: In a large bowl, coat either chicken thighs or breasts with chili powder, cumin, onion powder, garlic powder, smoked paprika, salt, pepper to taste.

  3. Sauté the onions and bell peppers with chile lime, garlic powder, onion salt. Add diced tomatoes in last for ~5 mins.

  4. Transfer the meat to the veggie skillet. clean out large chunks of food from cast iron, but don’t fully clean it.

  5. Put the tortilla down in the cast iron skillet and add cheese (grated Colby and pepper Jack), meat, veggies, and tomatoes. Fold tortilla over halfway and serve

Notes

Don’t burn.

Pro tip: don’t start a grease fire (12/23/23)

Goes well with guac, chips and salsa, corn, Spanish rice, etc.
