Fast and Fancy Chicken

4-8 chicken breasts, skinned and boned
8 oz Swiss cheese, sliced
½ lb Fresh mushroom soup
1 cup water
2 cups herbed stuffing mix, low sodium (1-6 oz Box of stuffing works well)
Herbed bread crumbs can be used instead
¼ cup butter, melted
Instructions
In a sprayed 9 by 13 in. shallow baking dish or pan, place the chicken in a single layer. Top each piece with slices of cheese to cover chicken. Sprinkle the sliced mushrooms over all. In a small bowl, combine the mushroom soup and water, then pour over the mushrooms. Sprinkle the stuffing mix over the top and drizzle with the melted butter. Place in a preheated 350°F oven and bake, uncovered, about 35 min. or until cooked through. If desired, a couple sprigs of fresh rosemary can be placed over top before placing in the oven. This really adds a wonderful flavor.
