Potato Tacos with Chorizo

Ingrédients

12 oz chorizo

8-10 Yukon Gold potatoes

1 cup shredded melting cheese / mozzarella

black pepper to taste

corn tortillas

Instructions

  1. Boil potatoes to cook

  2. Break up chorizo in a skillet until crumbled and cooked (about 12 to 15 minutes)

  3. Add cooked potatoes to chorizo, mash and mix to combine

  4. Season with salt and pepper

  5. Add melting cheese

  6. Microwave tortillas in damp paper towel for 45 seconds

  7. Place the filling in the tortillas, fold in half

  8. Place tacos on greased/sprayed baking sheet

  9. Bake at 400 degrees for 10-15 minutes
