3 1/2 cups veg. broth
Red bell pepper (diced)
Yellow onion (diced)
1/2 cup cream cheese
15 oz tomato sauce
15 oz black beans (rinsed and drained)
15 oz red beans (rinsed and drained)
3/4 cup red lentils
3/4 cup salsa
1 cup frozen corn
1 tsp paprika
1 tsp garlic powder
1/2 tsp cumin
1/4 tsp cayenne pepper
Shredded Mexican cheese
Tortilla chips
Instructions
1. Sauté pepper and diced onion in pot w/ olive oil (3 min)
2. Add all ingredients besides cream cheese, shredded Mexican cheese, and tortilla chips
3. Cook for 25-30 min
4. Add & stir in cream cheese
5. Top with shredded Mexican cheese and tortilla chips (crunched)
