Thanksgiving Turkey Soup

Turkey carcass
1 large onion, quartered
1 bunch celery, 1/2” slices, reserve ends and butt
12 oz. Package baby or crinkle cut carrots
2 bags frozen pearl onions
Leftover turkey
1 c uncooked rice, white or brown
1 T Wegmans cracked pepper blend
Salt
Instructions
Cover turkey carcass with water in large soup pan. Add onion and celery butt and tops.
Simmer 2 hours.
Remove bones and vegetables, reserving broth and any meat.
Prepare rice as directed.
Cooked Pearl onions as directed.
Shred or cut turkey into bite size pieces
Add celery and carrots to broth, simmer 15 minutes. Add remaining ingredients and heat through. Adjust spices.
