SOUP Chicken And Rice Soup

Rotisserie chicken or any whole chicken.
Water
Oregano
Celery
Onion
Sliced Mushrooms
Gold potatos
Carrots
White rice
Heavy cream
Salt
Pepper
Instructions
Pick rotisserie chicken somewhat clean and set picked chicken aside.
Put enough water in a pan to just cover whole chicken carcass.
Season water with salt, pepper and oregano.
Bring water to a boil then turn heat down and let it simmer for a few hours.
While simmering, keep tasting and add spices to desired flavor. Do it a few times while boiling.
Also, while simmering, chop veggies into bite sized pieces.
Remove carcass from water and finish picking clean.
Add all chicken and veggies to water and bring to a boil then turn heat down to simmer.
Add heavy cream to desired color.
Let simmer until veggies are cooked to desired doneness. About 40 minutes.
Cook rice in rice cooker while veggies are simmering.
Put desired amount of rice into bowl and top with soup.
Optional - Garnish with avocado
