Eggnog

3 cups whole milk
6 large egg yolks or 7 Medium yolks
2/3 cup sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2 teaspoons ginger powder
2 teaspoons nutmeg
11/2 cup heavy cream
If you like your eggnog extra sweet, you can do 1 cup of sugar and 2 cups of heavy cream.
Instructions
1. Start warming the milk in a pot on low
2. Separate the yolks from the whites
3. Whisk the egg yolk and slowly add 2/3 C sugar
4. Add warm milk to the egg yolk a little at a time - you don’t want it to curdle!
5. Add 2 tsp Vanilla Extract and whisk
6. Strain
7. Return to heat but do not boil. Cook until thick.
8. Add 1 tsp Cinnamon, 1/4 tsp ground Clove, 2 tsp Ginger, 2 tsp Nutmeg
9. Add 1 1/2 C heavy cream
10. Whisk and then let rest
