Pork Egg Foo Young

Ingrédients

1/2 Lb Diced pork loin(cooked)

8 eggs

1 1/4 cups Bean Sprouts

1 cup Chopped Mushrooms

1 cup Chopped Onion

1 cup Sliced Green Onion

1/4 cup Sliced Green onion for garnish-set aside

3 pinches White Pepper

1 teaspoons Salt

Instructions

1. Dice pork into 1/4 inch squares. Cook until done and set aside.

2. Place 8 eggs in a large mixing bow and beat until completely mixed.Beat in white pepper and salt. Add all other ingredients except green onion garnish. Mix together well.

3. In a large skillet add ½ inch of peanut oil. When oil is very hot ladle egg mixture, ½ cup at a time into hot oil. When edge starts to turn brown spoon hot oil on top of mixture until egg starts to turn white. This will allow you turn the patty over easier. Turn patty over and cook until golden brown. About 2 to 3 minutes. Continue this process until mixture is gone.
