General Conference Cinnamon Rolls

¾ cup instant potato flakes or potato pearls
½ cup powdered milk
2 cups hot water
¾ cup milk
2 cups hot water
2 tablespoons yeast
½ cup sugar
½ cup oil
2 eggs
1 tablespoon salt
8-9 cups flour
Frosting:
1 stick soft butter
¼ cup milk
1 teaspoon vanilla
3 cups powdered sugar
Instructions
Mix potato flakes, powdered milk, and hot water. Add milk and two more cups of hot water. Sprinkle yeast over mixture, and let dissolve.
Add sugar, oil, eggs, salt, and flour to make a soft dough. Knead by hand or with a mixer. Dough should be soft but not sticky. Allow dough to rise until doubled in size.
Punch down, divide, and roll into 3 parts. Roll each part into a rectangle, spread with melted butter, and sprinkle with cinnamon and sugar. Roll tightly, slice, and place in greased pans. Let rise until doubled. Bake at 350°F for 15-20 minutes.
Frost with icing made of butter, milk, vanilla, and powdered sugar after baking.
Notes
These rolls are traditionally made for general conference weekends. Dough can be refrigerated overnight for a quick bake the next morning.
