1 9-inch pie crust
2-4 strips real bacon
1/4 cup diced green onion
1/4 cup pepper cheese or Swiss cheese, grated
4 large eggs
1 cup half-and-half
1/8 tsp salt
1/4 cup Monterey Jack cheese, grated
Instructions
Preheat oven to 375°F. Cook real bacon to crisp, then break up, layering with green onion and cheese. Beat eggs, add cream and salt. Pour over ingredients in pie crust. Mix ingredients well. Bake until top is golden brown and filling set, 25-35 minutes. For crustless recipe, spray glass pie plate with Pam, bake at 400°F for 30 minutes. Can add extra cheese or toppings as desired.
