2 servings of fresh white noodles
Szechuan peppercorn oil, heated - for drizzle
Pork topping:
500g of Pork mince (possible vegan, swap for vegan sausages)
2 tbsp of cooking oil
1 ½ tbsp of dark Soy Sauce
1 tbsp of Shaoxing Wine
2 tbsp of hoisin sauce
1/2 tsp of Chinese five spice
1/2 bag of spinach
Sauce:
2 tbsp of sesame paste
3 tbsp of light soy sauce
1 tsp of sesame oil
1/2 tbsp of Szechuan peppercorn powder
2 tsp of sugar
1/2 tsp of salt
2 cloves of garlic, minced
1 tbsp of Szechuan peppercorn oil - heated
Garnish:
Garlic flakes
Peanuts, crushed
Sesame seeds
Spring onions
Instructions
In a pan, add the pork and cook the pork until lightly browned. Then, add dark soy sauce, shaoxing wine, hoisin sauce and five spice powder. Cook until the pork turns to dark brown colour.
Then, add spinach, Give it a final mix and set aside.
In a bowl, whisk the sesame paste, light soy sauce, sesame oil, Szechuan Peppercorn powder, sugar, salt, and garlic.
Heat the Szechuan peppercorn oil over high heat, pour into the sauce and give it a good mix.
Cook the noodles according to instructions.
Add the noodles to the sauce and give it a good mix.
Add the pork to the noodles.
Garnish with spring onions, garlic flakes, crushed peanut and sesame seeds.
Drizzle with heated Szechuan peppercorn oil, give it a good mix and enjoy!
