1 1/2 oz Rum (Scarlet Ibis Rum)
1/2 oz Pineapple Juice (Acidulated Pineapple Juice)
1 1/2 oz Coconut Syrup
5 drops Saline Solution (80g water 20g salt)
2 dashes Angostura Bitters
1/4 tsp Xanthan Gum
60 g Pineapple (Frozen)
170 g Ice (pebble or crushed ice)
Pineapple Wedge
Instructions
In a blender, add all ingredients and blend.
Next, add the ice and blend again.
Garnish.
