Peach Salsa Halloumi Bowls

Ingrédients

1/2 cup brown rice

1 can black beans (drained and rinsed)

1 block fried or grilled Halloumi

1 ripe avocado (sliced)

PEACH SALSA

2 ripe peaches (cubed)

1/4 cup red onion (diced)

1/2 jalapeño (diced)

1/2 red pepper (diced)

1 tsp lime juice

CITRUS SAUCE

1 orange, juiced

2 limes, juiced (about 1 tbsp)

1/2 jalapeño

1 cup cilantro leaves and stems

1/2 ripe avocado

3 tbsp olive oil

1 avocado (for topping)

Fresh cilantro (for garnish)

Instructions

Prepare the individual components according to each recipe linked above.

Assemble bowls with the rice, beans, halloumi, and avocado. Top with scoops of the peach salsa and drizzle with the citrus sauce. Garnish with more herbs. Season to taste and serve with lime wedges.
