Raspberry/Strawberry Salad

Ingrédients

1 large head red leaf lettuce

1 package fresh spinach

1/3 cup cooked bacon, chopped

1/2 cup red bell pepper, sliced

1 purple onion, sliced

1 cup strawberries or raspberries, sliced

1/3 cup sugar

1 cup cashews

15 wontons, cut into thin strips and fried

Dressing:

2 tbsp red wine vinegar

3 tbsp sugar

1/2 cup oil

1/2 tsp dry mustard

1/2 cup strawberry or raspberry jam

1/2 tsp salt

Instructions

In a separate pan, mix sugar and cashews. Stir over medium heat until sugar sticks to cashews. Mix lettuce, spinach, bacon, bell pepper, and onion in a large bowl. Just before serving, mix in cashews and dressing.
