Kneaders Raspberry Cream Cheese Pie

Crust:
1 cup flour
1/2 tsp salt
1/3 cup shortening
2 2/3 tablespoons cold water
Filling:
16 oz cream cheese
1 1/3 cup powdered sugar
2 tsp vanilla
2 cups whipped cream
Raspberry Coulis:
12 oz raspberries
1/4 tsp orange zest
1/2 cup sugar
1/4 cup lemon juice
1/4 cup water
Instructions
For Crust:
1. Mix flour and salt.
2. Cut in shortening.
3. Slowly add water and knead until dough forms.
4. Roll out and place in 8 or 9-inch pie tin.
5. Bake at 400 degrees for 8-10 minutes or until puffy.
For Filling:
1. In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
2. Fold in whipped cream.
3. Spread filling into cooled pie crust and refrigerate until set.
