Pumpkin Bread

1/2 cup butter or oil
2 cups sugar
1/4 cup applesauce unsweetened (or use sweetened and less sugar)
4 eggs
2 cups pumpkin, mashed (1 15-oz can)
2/3 cup water
3 1/3 cups flour
2 tsp baking soda
1/4 tsp baking powder
1 1/2 tsp cinnamon, ground
1 tsp cloves, ground
Instructions
Cream butter and sugar. Add applesauce; mix well. Add eggs one at a time. Mix well at medium speed of mixer. Stir in pumpkin and water. In a separate bowl, combine the flour and other dry ingredients. Add the flour mixture to the creamed mixture, mixing well. Fold in nuts or raisins if desired.
Spoon into greased and floured pans (3 small – 5x3x2 pans). Bake at 350 for 40-60 minutes or until a wooden pick inserted comes out clean. Cool in pans 10 minutes, remove from pans, and let cool on wire racks.
Notes
Add nuts or raisins if desired.
