Oreo Sugar Cookie Dough - Pizza Pie Cafe

8 lbs cold butter blend
28 cups sugar (7 quarts)
4 cups brown sugar
1/3 cup baking soda
1/3 cup baking powder
2 tbsp salt
5 1/2 cups liquid eggs (33 eggs)
1 1/4 cups lemon juice
44 cups high gluten flour (11 quarts)
24 cups ground Oreo cookies (6 quarts)
Instructions
1. Add butter blend, sugar, brown sugar, baking soda, baking powder, and salt to bowl. Mix on speed 1 for 2 minutes, then speed 4 for 2 minutes.
2. Scrape bowl and paddle.
3. Add liquid eggs slowly with mixer running on speed 2 and continue mixing for 2 minutes.
4. Add lemon juice and mix for 30 seconds on speed 2.
5. Add high gluten flour and Oreo crumbs to bowl, mix on speed 1 for 1 minute, then on speed 3 for 3 minutes.
Notes
Scrape bowl and paddle after initial mixing. Total mix time: approximately 6 minutes.
