3 oz Ground Chuck (80% lean, 20% fat)
3oz of Onions, sliced extra thin (approx. a handful)
1 Potato Roll
1 slice of American cheese

The Burger
The most important thing in this recipe is slicing the onions thin enough to cook in the time it takes this thin burger to cook which is only a few minutes. So take your time and get the onions as thin as possible. The other important thing is making sure you do not buy ground beef that is lean or else you will not have enough fat to cook the burger.
Portion the meat into 3oz patties or balls slightly smaller than a baseball.
Preheat the cast iron pan really well, and right before it starts to smoke, toast the buns quickly.
Once the buns are toasted, remove from the pan and then add two balls of the ground beef to the pan with space between. Then immediately smash the burger with the silicone spatula. To ensure it doesn’t stick, use parchment paper. Press the edges of the meat into the pan to get it nice and thin.
Then season the patties with salt and then add about a handful of the onions right on the meat. Season the onions. This is the only side of the patties that will be seared so make sure it's a good sear by ensuring your heat is high enough and you are managing it throughout the process. Peek to see I a crust has developed and once you see it, take the fish spatula and scrape the burger and flip it with confidence so the onions are now cooking.
Season the other side of the meat and then add a slice of the cheese, then on top of the cheese, the bottom bun, then on top of the bottom bun, the top bun. That will let the buns steam, warming them up. The reason the onions need to be so thin is that they need to cook super fast for this method. If the onions are too thick, the burger will be overwhelmed with raw onion rather than cooked sweet onions balancing out the rich burger. If the onions are thin enough, 1-2 minutes it's all the are going to need to cook.
Once the onions are nicely cooked, scrape up the burger and take the top bun and close up the burger and dig in. Total cook time is about 3-5 minutes depending on the size you slice the onions and how thin you smash the burger so please keep in mind the variables that are at play here.
