Coconut-Lime Chicken with Creamy Sauce and Steamed Rice

4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 cup coconut milk
1 tablespoon lime zest
2 tablespoons fresh lime juice
1 tablespoon honey
1 teaspoon ground ginger
2 cloves garlic, minced Salt and pepper to taste 2 cups cooked white rice
2 tablespoons fresh cilantro, chopped Lime wedges for garnish
Begin by heating the olive oil in a large skillet over medium heat.
Season the chicken breasts with salt and pepper on both sides.
Once the oil is hot, add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until golden-brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
Pour in the coconut milk, lime juice, lime zest, honey, and ground ginger. Stir to combine and let the sauce simmer for 2-3 minutes until it thickens slightly.
Return the chicken breasts to the skillet, spooning the creamy coconut lime sauce over the top. Allow the chicken to simmer in the sauce for an additional 2-3 minutes, allowing the flavors to meld together.
Serve the chicken over a bed of fluffy, steamed white rice.
Drizzle the coconut lime sauce generously over the chicken and rice.
Garnish with fresh cilantro and lime wedges. Serve immediately for a tropical-inspired, indulgent meal.
