Ingrédients

  • 1-2 lbs chicken, cubed

  • 2 quarts chicken broth

  • 2 large zucchini, quartered

  • 1 large yellow onion

  • 1 tbs fresh minced garlic

  • 1 poblano pepper, diced

  • 1 can diced green chilis

  • 1 can cannellini beans

  • 1 jalopeno, diced

  • paprika

  • chili powder

  • cayenne

  • cumin

  • oregano

  • salt pepper

  • cilantro

  • avocado

  • 1 jalopeno, sliced

  • cheddar cheese

  • sour cream

Instructions

  1. Salt and pepper chicken. Tablespoon of avocado oil in pan on medium head. Add chicken and sear each side, about 2 minutes each side. Take chicken off and set aside, does not need to be cooked through

  2. Add onion along with your spices and cook until onions are translucent. Add garlic and cook for 1 min then add zucchini. Cook down zucchini, stirring throughout. Add chicken broth and bring to boil. Add back chicken and simmer. Add cannellini beans 15 minutes before ready to serve. Try to simmer for at least ~30 minutes. Optional: stir in handful of cilantro at end

  3. Garnish and serve.
