Spam Fried Rice

Ingrédients

  • 1/2 can of Spam

  • 1 carrot

  • 1 onion

  • 3 cloves of garlic

  • 2 spring onions

  • 3 eggs

  • 2 pinches of ground white pepper

  • 1 mug uncooked rice, day old is best

  • 1 1/2 tbsp light soy sauce

  • 1/2 tbsp dark soy sauce

  • 2 tsp sesame oil

  • Pinch of MSG

  • 1/2 tsp Baba’s curry powder

  • Veg oil

Instructions

  1. Chop your spam, carrot and onion into small pieces. Mince your garlic and finely slice the spring onions, separating the whites to the greens.

  2. Whisk your eggs with a pinch of white pepper and set aside.

  3. Mix your day old rice with a small drizzle of water on the back of your rice paddle as this helps to soften the rice a bit.

  4. If you’re not using a non stick wok, on high heat pour ½ ladle of veg oil into your wok. Give it a quick swirl then clear your oil from the wok. Now add 2 tbsps of new veg oil. This trick prevents your rice from sticking together but if you’re using a non-stick wok skip this step and just add 2 tbsps of veg oil.

  5. Fry your spam in the wok, then once crispy add your carrot, onion, garlic and the whites of your spring onions. Fry for 5 mins on medium-high heat.

  6. Move everything to the edge of the wok and add your beaten eggs. Stir the eggs a couple of times.

  7. Now add your rice, green spring onions, light and dark soy sauce, sesame oil, curry powder, MSG and a pinch of ground white pepper, then toss everything together a couple of times.
