45 oz. jars spaghetti sauce (Wegmans Grandma’s Pomodoro)– about 4 cups
1 package wegmans lasagna sheets
32 oz part-skim ricotta cheese
1 beaten eggs
1 T chopped fresh parsley
½ cup grated parmesan or romano
1 jar roasted red peppers, drained, pureed, drained again (about 1 c. puree)
16 oz part skim mozzarella
¼ cup pesto
parchment paper

Instructions
Layers:
Cooking spray
1 c. Sauce
Noodles
½ of Ricotta mixture (ricotta, egg, parsley, parmesan)
Pureed red peppers
1½ c. Mozzarella
1 c. Sauce
Noodles
Rest of Ricotta mixture
Pesto
1½ c. Mozzarella
1 c. Sauce
Noodles
1 c. Sauce
Parchment (directly on sauce)
Foil
Bake 75 minutes at 400 degrees.
Uncover, sprinkle with rest of mozzarella, bake 10 more minutes.
Rest outside of oven 30 minutes before cutting and serving, or make a day ahead, cut when completely cold, reheat at 350 degrees for about 1 hour.
