TJ's One Pot Turkey Rigatoni

1 tablespoon olive oil
1/2 yellow onion, chopped
4 cloves garlic, minced
1 lb ground turkey, I use 93% lean
2 teaspoons fresh rosemary, chopped
2 teaspoon kosher salt
1 teaspoon Italian seasoning
1 teaspoon black pepper
16 oz rigatoni or pasta of choice
1 1/2 cups chicken broth
1/2 cup half and half or milk
1 14 oz can San Marzano tomatoes or 1 1/2 cups tomato sauce
1 cup spinach, roughly chopped
Parmesan cheese to serve, omit for dairy free
Red chili flakes to serve, optional
Instructions
For the tomato sauce, I just blend the San Marzano tomatoes. It’s a delicious and cost effective alternative to using half a jar of tomato sauce. Either works! If using tomato sauce, I like the Tomato Basil Marinara from TJ’s or Rao’s from any other grocery store.
Heat the oil in a deep skillet or dutch oven with a lid over medium heat. Add the onion and garlic and stir until fragrant, about 2 minutes.
Add in the turkey and mash with a meat masher or wooden spoon. Add the Italian seasoning, rosemary, salt and pepper and continue to stir occasionally until the meat is just browned.
Add the pasta, broth, half and half and tomato sauce. Stir to combine and raise the heat to medium high until boiling.
Cover, reduce heat to low and cook for 13-15 min, stirring every 3-4 minutes, until the pasta is tender and you’re left with a creamy sauce.
Turn off the heat and stir in the spinach. Season to taste, it needs a good amount of salt!
Top with grated parmesan cheese and red chili flakes if you like a little spice!
