Tuscan Salmon

Ingrédients

4 Salmon Filets (skin off)

S&P to taste

2T Oil

2T Butter

6 Cloves Garlic (minced)

1 Onion (diced)

1/3C Dry White Wine

Sun-Dried Tomato Strips

1 3/4C Half and Half

Spinach

1/2C Parmesan Cheese (grated)

Remove the skin from the salmon and generously season both sides with salt and pepper. In a cast iron pan, heat the oil on medium high, and cook for 5 mins (ish). Flip and cook another 2-3 depending on thickness and remove.

Instructions

Add the butter to the pan. Cook the garlic until fragrant, then add in the onion (2 mins). Add in the wine and reduce slightly. Add the tomatoes and cook (2 mins). Reduce heat to low, add the half and half and salt and pepper to taste. Simmer for 5 mins. Add the spinach. Once wilted, add the cheese. Simmer for 2 mins. Add the salmon, cover with sauce and serve (we did mashed potatoes and green beans!)
