Key Lime Pie

1 1/4 cup graham cracker crumbs
1/3 cup butter, melted
1/4 cup sugar
1 8 oz cream cheese (microwave to soften)
1 can sweetened condensed milk
1/2 cup key lime juice
4 egg yolks
Whipped cream, for serving
Instructions
For the crust:
Mix together graham cracker crumbs, butter, and sugar. Press into pie dish and cook for 5 minutes at 400°F.
For the filling:
Mix softened cream cheese and sweetened condensed milk with an electric mixer until smooth, scraping down the sides of the bowl as needed. Add key lime juice and mix well. Add egg yolks one at a time, mixing well between each addition. Pour into pie shell and bake at 400°F for 10 minutes. Let cool, then refrigerate for several hours before serving. Top with whipped cream if desired.
